You'll need a separate oil temp gauge to measure oil temp, you'll find it take a good while longer than the water to warm up, and remember oil has a working range of ~80-120 too cold is as bad as too hot!
Unwrapped manifold will not alter oil temps, just engine bay temps.

Before you do what oil temps are you running?
Oil needs to be 80 to dissolve the s**t and do the job its there to do (and one of the most important things in the engine)
Oil will sit at 100 all day.
Cheap oil will start to degrade at 110
