Generally the panel gaps on the Polo are very narrow and precise, if you look at the side profile and the complex door creases and how it fits it is very impressive. If it is only the bonnet and headlamp area then it suggests it can be adjusted to correct standards.

Maybe I’m being fussy, I know it’s not a hand built car or anything and I can live with it, I had a Alfa GT before so used to not great build quality, gaps on the left are a lot more evident maybe 2-3mm in differences to the right where the bonnet seems a tighter fit, is this the norm? Some good ideas there. Those mats look a good buy and better value than dealer prices.
I would add mud flaps as well considering the bad weather ahead.

Also don't forget the wiper blades - the standard fit ones can be poor and a lot of people upgrade to Bosch

I don't own one but can understand your thoughts, it seems the Polo is too sanitised and not a raw enough performance experience than the Fiesta? Could this be due to the automatic gearbox.

I can only speak about the GTI from experience but I’d say money wise the bigger wheels are probably the only thing ‘worth’ the money considering they are only £350 optional extra. Based on this unless the housing is 100% air tight and dried out any remaining moisture will cause issues. Maybe try letting it dry out fully, leaving it open plus hairdryer then refit and seal it up. You could go as far as silicone sealant if you're confident it won't need dismantling for a long wh...
