Wow that's very good MPG, I'm jealous. The most I've had on a drive is just over 50MPG while driving thru Cornwall at ~50 to 60mph. Didn't think 58mpg was possible!

Wow, you have a GTI and don't accelerate hard :D No, the usual routes I drive are so congested and the roads are single carriageway, so most of the time it’s only possible to go with the flow of the traffic. I have a 2020 Polo GTI DSG and when you drive normally the gearbox is pretty smooth and slick. Does the car show your average speed? Could be heavier traffic leading to a less efficient speed and more stop start?

One thing I should clarify is the sound goes away completely if you turn the engine off and will resume immediately when it's turned back on. But it's not affected by turning the infotainment system on or off, which might rule it out.

I wonder if this could be it. It would make sense that the infotainment fan would only come on after I've been driving for a while. It continues when I turn the system off but you'd expect the fan to continue anyway.

The fan and AC are off. I had a listen under the bonnet and couldn't hear the noise. I even let the engine warm up so that the engine (radiator) fan came on but couldn't hear it.

I briefly had the soundaktor rattle issue on my 2020 gti after the bonnet had been removed to be resprayed.
