As with mk4 glx 1.6 I'm running Michelin Pilot Exalto 2's. I'd recommend them. I haven't had a dodgy moment at all recently. Especially weird considering the awful weather. No the information in the flap is specific to the GTI. My girlfriend has a Mk5 as well and the information is v. different. In her case the pressures on the lower side. I've been using Meguir's Gold Class Shampoo for a fair old while, have tried other products from other brands, but they don't tend to give as long a good result. Also use a range of other Meguir's and Autoglym products, just depends whats right for the job.

I'd agree stamps are not the be all and end all. You could if you wished get a friendly garage to stamp them any way I'm sure, if it bothered you.

They don't do replacement bushes for the rear anyway.
Poly Bushes should make the car drive more accurately because there should be less give, and they should last much longer.

I recently did about 35 miles on the red light. To be hones they're usually set to give you about 50 miles with the red light on.
