Currently using Monza's 205 40 16
Going to lower it soon, only 20mm
Can I use 17 monzas from golf gti ?
Will there be any issues?

Different PCD I'm afraid, Golf's are 5x112 so no good unless you buy adapters..However, the 6R GTI has 17" alloys, so they will fit fine if you can find a set

Why would you want to widen the tire? I have 195 on the standard rims and mine has 35mm hr springs on and they would fit on mine I am also running spacers

It all depends on the offset/width combo of your rim...
Ive had 215/25/17's while my car has been lowered 50mm and there were no issues because the wheels were 41 offset and 7j which means they sat inside the arch

I would like to widen it to get a bit more rubber on the floor. It just wheel spins for fun in 1st and a fair bit in 2nd.
215 25 17 sounds good. Low profile that.
The ones i am thinking of getting are 35 offset.
Would that be enough ??

25 profile is a bit foolish to be honest. You should get 215/40 or 205/40
