What height does the GTI 6r springs sit at compare to the rest of the models eg 1.4, tdi etc
also does the car sit flat instead of higher at the rear?

I'd say the GTI springs are at least 15/20mm lower than an SE.
I fitted my old stock GTI springs to a friends 6R 1.2 TDI SE, and that's what it dropped by, and was level front to back.

remember that the GTI is also heavier than your regular 1.4 or 1.2TSI

Thinking of doing 25mm/40mm on the car with H&R lowering springs, should I change the shock absorbers or would it be fine?

I changed mine to 35mm at front and 55mm at back with H&R and im still using the stock shock absorbers.
