Excellent car. I used to have one (same colour, 5 doors) and it was a true monster. Stage 2+ at around 400bhp

Sorry to sound a bit stupid but what is ceramic coating? I'm assuming it's to do with the paintwork?
Cheers

Its a ceramic polymer polish that forms a 'skin' over the pain making it more resilient to fallout, acid damage, rain, light scratches etc.

Pretty much what Alex said it forms a nano-ceramic technology to create a skin over the paint, this skin forms a barrier that resists fallout, acid and alkaline damage from Ph2-Ph12, so just shy of bleach and acid. Resists temperature damage from -40 to 250 degrees (I doubt this though but don't actually need it), it's swirl resistant and makes it very easy to clean. Also adds unrivalled shine.

So where is the best place to get this from and is there any particular method to applying it?

I bought it directly from Gtechniq and they send instructions, if you're not familiar with working with coatings I recommend just using the exo v3 as it can be removed easily.

Basically you apply it with a microfibre sponge in a north south west east motion and then wipe off immediately. (paint should be perfected before hand)
