Thermostat replacement (metal type)

I ordered a new thermostat because the engine was not coming up to temp quickly enough. The part that arrived is the plastic barrel/cylinder type.
When I took the old thermostat out I was surprised to find it is the traditional metal type.
I forget which way I took it out (so many other jobs on the go). Does the gasket go in before the seal (o ring)? Does the pointy end of the thermostat face in to the engine block or out to the hose connector?
