Temperature gauge reading

Hi guys.
I have a simple question. Does the temperature give a true variable reading?
In some cars the gauge will always point to the same place when in a ‘normal’ range and goes to the top when over temperature.

The car is a 2004 1.2 three cylinder

No it does exactly as you describe,normally points to the middle then goes into the red when it’s too late

As above, it will read the actual temperature up to 75C and will then rise quickly to 90C and remain there until 107C after which it will again read the true temperature.

Here are the various temperature parameters.
VW Polo (Mar.2005)
Thermostat begins opening at 84C. Fully Open at 98C.
Fan Speed 1 ON at 91C to 97C. OFF at 91 to 84C.
Fan Speed 2 ON at 99C to 105C. OFF at 98 to 91C.
