Its worth pushing the boat out a little when it comes to suspension IMO mate
Cheap coilovers normally result in terrible ride comfort and poor quality construction which leads to ceasing and corrosion issues.
Its worth spending a few more hundred on a really good set that will last such as Weitec or AP coilovers.
The H&R 60/40 Cup kits are always highly recommended, they give the car a nice drop and dont alter the comfort much which is good

Its always worth spending a few extra quid when it comes to suspension because its something your going to be driving everyday

Wheels look very nice mate
195/40/R16 tyres will do the job nicely, give you a nice stretched look whilst still being practical for daily driving

You can go just as low as someone on 15" rims if you use the correct tyres matey
The 195/40's are perfect because they compensate for the extra 1" in wheel diameter, its just the same as somebody running 195/45/R15's
The overall difference is something silly like 1.1% so basically nothing.
You can go pretty low mate, I avoided going too low for daily use because a low car in the countryside wasn’t practical, but there's nothing stopping you getting it slammed

Speedbumps are a pain in the ass, mine just about cleared them if I drove at 2 or 3 mph but my exhaust did catch sometimes
Here's a couple of pics of how mine was sitting on 16" rims





As you can see its not slammed but it still looks relatively low and gives the car a good look over the standard ride height
