Just wondering if the instrument cluster from a Polo 6C TDI would fit a 6R TDI?
Would be nice to have a temperature gauge and a proper fuel gauge too.

Not possible, you need a Amarok cluster

What needs to be done to install the Amarok cluster in a Polo?
I know that there will be some coding required, but is it something that can be done with VCDS or more specialised?

That is definitely more specialized. You could try to contact i.e. spacewalker, he is regularly selling and programming these clocks.
Other options are Seat Toledo (PQ25) or Skoda Fabia (PQ25) clocks. All cluster changes need programming and transferring of immo data.

I've seen someone on eBay selling a set of reprogrammed clocks for £399.
Don't really want to spend that kind of money just to get a temperature gauge, especially when I can get a set of Amarok clocks for £85.
I know someone who can sort the immobiliser and mileage side of things, so if it it just a case of copying the coding from the original clocks and setting up the keys for the immobiliser it may be worth a punt.
