Again, probably not what you want to hear but I have a 20’ Polo and a 20’ Golf and the IPhone 7 & 8 Plus, 11 pro max and 12 pro max have all worked fine without cutting out, tested over several 15/20 minute journeys.

Surely the evidence is that it's your USB socket or head unit that has a problem?
You can't be that unlucky that you've twice chosen specific iphone models that are a problem.
The evidence suggests it’s the car hardware or software, which is what I said earlier. I will try and get a firmware update at the next service. The car is out of warranty and a repair could be costly.

The Bluetooth volume was just a setting on the car ICE unit. Odd how it had changed.
