this may not solve engine problems, but it'll help the throttle delay. have you looked and made sure that your throttlwe cable is tensioned up?
it its loose you can adjust it with the little clip that slides around the cable.

when my throttle cable tensioner doohickey came loose, the response and power output got gradually worse and worse, til i was barely making 30 in 3nd gear with my foot on the floor. which happened over the course of a 5 mile cross town journey!
and then whilst pootling along like that, about 3/4 a mile from target on a straight road.. the car started slowing even more - a couple exploratory pumps of the pedal later and i was left with owt but idling revs (shoulda just kept it nailed and used the clutch). still made it on time (at 15mph max and some 1st-gear uphills!) but had to do emergency repairs in the car park. simple enough when i figured out what needed doing, mind.
so if you suspect your cable its probably a good idea to get it sorted super quick in case that happens, too.

I had a similar problem to this after I had mine serviced. Even though all the HT leads had been changed during the service, I kangarood all the 10 miles home. By the time I got home it was almost dark when I lifted the bonnet and saw a spark arcing across the central HT lead to the dizzy cap. Turns out the nipple on the dizzy cap had been cracked at some point, and replacing the leads had finally stuffed it and it just broke away when I checked the leads. So, just to check, switch out the lights in your garage and run the engine and check for sparks.

mmmmm seeing sparks thru a hole thats arc'd out of your dizzy is one i'd forgotten about
service centres are b@stards for it, dodgy ones giving you crap leads (and spark plugs, totally wrong type) and keeping the good ones for themselves hoping you'll not be back under the bonnet til its time for the next service...

i had the same problem with my match. its was the damp and cold getting to the spark plugs so they wouldn't fire, because they aren/t properly protected by the sleeves. i just changed the plugs and leads and its running fine now.

yep, leeds are OK.
The bloody thing now seems to be running fine, if a bit rich - it chucks soot out of the exhaust when it starts

If it's running rich then your lambda may be at fault
