Having a brand new car specced exactly to your requirements is nice but this doesn’t appear to be the case for you. Personally I would try and find the newest/ lowest mileage, lowest priced GTI + in the country and then take it from there. Don’t be afraid to travel, I went to St Albans for mine, collected my car and went back oop North 
I did stipulate to the dealer that if it didn’t pass my ‘stringent’ pre handover inspection, I would request my deposit back as I wasn’t able to view or test drive the car beforehand. As it happened, all was fine.
FYI - 6 month old GTI+, 4200 miles, Reef blue with brescias and sat nav. 19k (advertised at 19480)
