So after some research and log with my VCDS, here are the point.
When dead cold (-4°C) the engine, according to VCDS rely on the lambda sensor as the "Close loop" still engaged.
As soon I start to drive, "Close loop" mode still engaged but when I release the gas pedal/when I'm idle the "Open loop" can engage and, sometimes "Close loop" engage again.
But here is the most interesting.
Few years back, I did a scan AND a backup of all my car setting/computer config.
Here are the spec of my ECU:
01 Electronique moteur
Description du système: 1.2l R4 TSI
Numéro de logiciel: 04E906027BB
Version de logiciel: 7876
Numéro de Matériel: 04E907309AF

Then I went to ETKA with my VIN:
Guess what I found:
First: Many update for my ECU are existing and mine is old as fu**

And yup "Le moteur tourne irrégulièrement au ralenti élevé après un démarrage à froid" means "the engine runs irregularly at high idle after a cold start."
So I think I found my issue.
And yeah, my ECU is concerned by the update as we can see on the table:

You only need
ODIS or VCP. ... or other similar tools.
There is no black magic to flash these units with the 'original' files, so no special skills are required, just knowing how to click with the mouse or touch the screen...

easy, no fear.
I think the advantage of having these files is that for example now in winter you can test each of the available files and thus know which one best suits your engine for those conditions,
your specific conditions.
The logical thing would be to start loading the latest update (_9314).

ODIS is not free I suppose.
I think it's available on erwin.
And I also think I need a specific cable ?

You can buy it on Ali (VAS-ODIS).
However, if your engine is among those included in the TPI, go to a VW dealer and it should be free.
Go with the TPI to the dealer, because the nauseating hyper-greed for money that exists today, makes mega criminals/dishonest people "EUerywhere".

From my experience in UK, yes these new files are always provided FOC, but there will be a charge for your chosen VW dealership to raise a technical help request, and later on, for them to load them into your car.
Luckily for me, when I failed to get that done using the first SEAT dealership, the second dealership believed me, and so did not try to force a full diagnostic check on me, so I was only charged for the time spent raising the technical help request, and then a few days later, the time taken to load the files into the car's controller.

I had to prove that there was a TPI for the air intake flap on one of my ex-Audis.
I guess if VW 'dealers' have to charge for their work time to the VW brand it's not the customer's problem..., they are the brand's representatives no matter where they are located.
The innocent customer is not guilty of the mistakes that car brands make, the customer has already paid for something that should work correctly, ...in these cases, passing the costs on to the customer for the time work is a dishonest practice... and if they also charge for defective parts, it is a totally criminal act.

I book on the 17 of January to update the ECU of the car.
The first dealership request me 320 euros to "Perform a diag and update the ECU"
Well.
I call an other one, I juste ask for an ECU update with the last one available.
He was a little bit shocked since, according to him "It's the first time we have this kind of request"
Because, for him, if the car is working correctly, it doesn't need update.
So I ask, "So why is VW releasing update for my ECU"
He was very evasive.
Well, it will cost me 150 euros this time.
Halft the price compared to the other dealer.
EDIT: BTW how they knows wich update is the good one for my car ?

A t least, it's less expensive with this other dealership. I don't know if buying all the tool is worth.
110 euros for the soft and how much for the device ?

But China seems very in advance in terme of copying.

I saw that there is a price difference between your screenshot and mine
The price at my case is 107euros, but at your photo is less, 97euros. Why is this happening ?

all kinds of quality.
In China they are now able to surpass the best quality of any product.
There are copies that are better than the originals. 'MUCH better'.
What is authentic? This now depends on how you interpret it.
If an electric Audi (80.000 - 100.000) has

Urban legends continue because everyone wants to buy cheap or free, and China does not oppose this bad habit...
