My polo has reflectors... D'oh!.

Would VAG be able to supply me a 'kit' with the holder and bulbs? I guess I would have to use a relay to power the bulbs and maybe use the 'door open' (interior light) signal to trigger the relay?

You don’t need a relay, just wire them in to the interior light. The puddle light comes as a whole unit with the bulb included.
