Some ideas for you to try-not sure about the costings though.....
You could always try to build a nice enclosures for subs and amps, one of the fibre glass ones they're always quite hard.
De-bagdeing the polo?
Swapping the Grills over for the gti versions?
Painting the callipers/ drums?
Delocked handles if you have a decent alarm?
Tinting the windows-this may be a bit too hard if doing your self but if you have the environment to do it in try it tints are only like £20 for a roll of film if you are prepared to take your time.
The only thing after that would be suspension i guess but you would be spending about £200-300 on that. fitted mine with my brother he's a great mechanic! (£200 for the suspension another £100 for the adjustment of the camber and miscellaneous tools, sprays etc.
unfortunately it all costs these days...
good luck

De-badging your 6n2 Polo
POLO Lettering
===========
Tools:
- Hairdryer
- Tooth Floss
- T-CUT/Polish
- Lit free cloth
1. Heat up the lettering and surrounding with the hairdryer, allowing the black adhesive to warm up and loosen
2. Take some tooth flush and gently place it behind the lettering and slice through the adhesive
Please Note: take care with this as you don’t want the plastic lettering to scratch your paint work
3. You will find that once the lettering has been removed you will be left with some of the black adhesive in its place, now you need to re-heat the adhesive and remove as much as possible
4. Finally clean up the area with some polish
VW Rear Centre Badge
=================
This can be removed using the same process as above but please note you will be left with a circular recess which will need to be filled and sprayed
Hope this helps

But are we talking about swapping the 6n2 normal grills for the GTI or the 6n regular grills for the 6n2 gti?
The first option i now is common but i never thought the 6n2 gti would fit the 6n.

6N2 = MKV
6N = MKIV

It's toooo easy to change the grill!! (know this as i done it myself!!)
buy grill from vw-about £20
open bonnet
four clips around the top of the grill-unclip these
pull out old grill
put in new grill and push the clips in
shut bonnet
job done!!!!
Time:5 minutes if that!!!
