I have had a symbol showing up now for a while on my Polo GTi, its displayed right next to the temperature reading underneath the rev counter in the digital display. The symbol is of a 'snowflake' type picture which i am guessing indicates that i have something wrong with my coolant levels/system or just the fact that the weather has been really cold of late. Not sure though because the symbol is still present on 'milder' days when the temperature reading is displaying around 9C. Anybody else have this experience or any thoughts?

In the SEATs we own, this comes up when the temperature is less than 4/5 degrees. It also makes a noise to alert you of this. It's just something to warn you to be careful.

Yeah, my "snowflake" icon appears at 4/5*C...
Just letting you know it might be slippery underfoot(tyre).
If yours is showing at 9*C, I'd take it back to the dealers mate.

The symbol does not appear at a particular temprature,(as far as i know)
it does however show as you said around 0C, or when the temprature outside suddenly drops....so it can still show at 9C....
