How easy (hard?) was it to install cruise control and how much of the dash had to come apart? It's on my list of things to do.

Installing it isn't that hard, although there's this connector behind the dash somewhere you've got to get at and I think you've got to remove most of the dash to do so

Apart from that, to install the stalk you need to remove the steering wheel and swap the indicator stalks around, connect a wire to this so called connector and the brake and clutch pedals and enable it in vag-com.

well not for me haha, corrected the title for you!
my uncle fit it for me (vw master tech) the hardest part is the main wire to, the ecu, i think. has to go round the the bulk head. maybe an easier way but dont like wires in wrong places so its fit spot on to the book spot on to the book. wiring the switches/stalks in is not too bad. number to number. or you can buy the ready made plug and wiring harness from and online store. address on here somewhere, or bang it in on google
