Someone with knowledge ... how does this sound?

Ok got a Polo G40 wanna lower it lots and lot's, say about 80-90mm with Coilovers, I then want a set of 14's with Low Profile tyres (35/30) and wanting 7x14@Front 9x14@Back (Schmidt TH Line).
Will this be an ok setup?
Also is it true that people put narrow tyres on wide wheels and somehow stretch the tyre over the rim? Euro golfs always look this way??
