Picked it up a 2 weeks ago after asking quite a few questions about stuff here...

I haven't done much at all compared to some people. Infact its pretty much standard, It didn't come with fog lights from the factory so I got them from a dealer and fitted them myself and de-badged the back.

Next plan I intend to replace the 16s fitted at the factory with Golf GTI 30 Edition BBS Pescara (any1 know how difficult this will be to fit? Spacers) and lowering 25/40 on H+R Springs. Thats pretty much my plan as its a daily driver I don't want to do to much to it.

I intend to clean, wax and polish it this weekend so will try and get some better pictures up then

That is correct and their offset is 35? Any any idea if that can be spaced?

Congrats on the new car! Candy white FTW. :D

According to http://www.golfmkv.com/forums/showthread.php?t=99784 the Pescara's offset is 51 and the wheel is only 7" wide.

I believe the thinnest pcd adaptors are 20mm (CMIIW), so that would produce an 'effective' offset of 31mm.

With an offset of 31mm but a width of just 7", the wheels themselves will still fit nicely inside the arches, but the tyre shoulder (front one especially) will already come quite close to the arch. I'd say 215/35R18 is the widest/highest you should use, 225 might already be pushing it too much...

If you'd like to visualise how such 215/35R18 tyres would locate on the car on those spaced Pescaras, have a look at this pic. It has 215/40R17 tyres on offset 35 wheels, so the shoulder of a 215/35R18 tyre on an offset 31mm wheel would come a further 4mm out than the tyres in the picture.
The wheel in that picture is 8" wide, so the outer edge of 'your' Pescaras would in fact be located 8.5mm further IN than the wheel in the picture. And the sidewall will be more balloon-like, not stretched like in the picture.
