Missing.. Coolant - Have you seen it?

Hi All
So today i brought a 2002 Polo TDI Sport 1.9 D It has been sitting for 2 weeks and took it for a test drive and heated well up to 90 and didnt go above it.
So me being me i brought it and drove it home. On my way home (8Miles) the Coolant light flashed up but the temp didn't move.. So i got home and filled it - Job down light off i just put it down to need extra coolant to circulate.
Anyway once heading out again later this afternoon it came on again! this time i checked underneath and around the engine but no sign of a leak and temp til at 90. and when i got home i double checked and had gone a bit and still no sign of a leak.
The only bit i can see leaking is on the side of the expansion tank when i fill it.. but surely that would drain the whole tank?
So its not over heating
Not Smoking
No Mayo/oil on filer cap
No oil in expansion cap
No obvious leak
Any ideas guys? Im wondering if maybe the coolant is just weak and getting hot and then dissolving? could this be a possibility?
