I have been changing the door latch in my 9n3 5door polo this morning have it all loose except for the wire that connects the latch to the outside handle how do I disconnect it?

The wire for the outer handle stays on/with the latch mech,you need to disconnect it from the outside handle by removing the the handle first before you can remove the latch from the door.Once removed you turn the wire 90 degrees and it will come out so you can transfer it to the new unit.
