I can't say I recall any switches or anything in my wife's Polo so does anyone know if this is possible with vag-com?

Pretty sure its an optional extra when you get the car. Its usually a key hole in the top right corner of the glove box I believe. If you don't have it you'll just have a blanking plate there.

Not sure if it can be done on VAG-COM though :?

I can't see that for the rather inexpensive option the the airbag de-act is that VW would use a whole new loom when the option is specified. Basically it's just going to be a key triggered switch in the loom behind the dash somewhere, so I would think it very likely that it could be turned off via VAG COM. Try posting up on one of the forums that the VAG-COM people reply on and ask them directly for which block it would be in.
