I have no idea when it comes to offset etc.

I've found some alloys i like but don't think they'll fit on my 6n2;

7.5 x 17.
5x100/5x112pcd (obviously this is 5 stud but I've heard you can adaptors?!?)

Alternatively if i find the same wheels with a 4 stud pattern would the 7.5x17 be ok? I think my cars lowered around 40, although im not certain.

Also i've seen strech mentioned on tyres etc, will that help stop rubbing?

Might sound dumb but i have no clue lol!

Adapters are generally 20mm thick, so that would take your offset out even wider.
17s generally fit fine on a 6n2 with a 30/40mm drop anymore and you will get tyre shrubbage.
If you stretch the tyres out, it will definitely minimise the scrubbing, but personally I'd say 7.5" wide wheels + adaptors would stick out way too far, and more than likely be illegal.
