Re: how low can you go on 16's?
Can't answer for 16's but I am down 80mm on 195/45/15/ and depending on how I drive she will scrub. Reversing off my driveway causes the rear tyres to rub the inner arch, front inner arches have been removed so that helped. Not sure you'd want to go lower than 60mm, past that and I could see you getting probs.
Re: how low can you go on 16's?
All depends on wheel offset. 15's with an et of say 28 are normally about 60mm without rubbing. I had my AS Cups 120 on the front with no rubbing and 100 on the rear, but rubbed like hell.
If you have the money:
1. Roll your arches.
2. Stretch tyres help.
I'm not completely sure on 16 tbh as i never go any bigger then 15. but id put a guesstamet at around 60mm.

If you've got coilovers it shouldn't really matter mate. Just find a decent line between looking good and not scraping too much. That's what the adjustments for!!
What tyres have you got on the Borbets? You want 195/40/16.
