No luck finding gloss pillars at the breakers yard then?
Not sure about the removing process but you'll want a matching VW paint (which for black is more than likely: LC9Z) but do double check the sticker under the boot liner next to the spare tyre as it will tell you the paint code.

Get a bodyshop to do it mate, they wont charge much and you dont have to fiddle with getting the parts on and off. Also if you do it yourself you wont get a good finish unless your doing it matt black. If you want it gloss it is very hard to get a nice finish unless your using a spray gun.
My brother got his bits and bobs painted by a local bodyshop and for his wing mirrors painted, b pillars painted, rubstrips painted only charged £80 and the finish was bang on mate
