IIRC its something to do with back pressure. Two pipes increases the pressure and thus limits the power/noise and helps the turbo - I cant remember who told be this so i might not be 100% accurate.

As for a custom zorst you have 2 options

1) a decent custom manufacturer like Longlife can make 'retro' exhaust pipes which curve down. Shrick also do a universal single outlet that curves down, but I'm not sure what the fit and finish will be like on the 9n (it looks the t**s on the MK1 Golf!)

2) Any custom fabricator will cut a professional looking cut out for the muffler to poke through. most off the shelf items will hang under the bodywork though (not a good look)
