Part number of the Eibach Spring?
Your springs have since settled lower since installing.
They should have rubber sleeves on ? This reduces the binding noise when turning the steering wheel.

Sportline Version,

Do you hear a noise when the radio is off and complete silence in the car?
The car has settled more, the springs tension up when turning then release causing the knocking sound.
I had this on my MK6 Golf with Koni Dampers and H&R springs for many years 5+. No issues besides the small noise of the springs. On Cold Days you hear it and warm days nothing.

i would have it checked out to make sure all is tightened. Some workshops might just add grease to make it quiet. Others have gone to lengths and replace the shock mountings.

Please post some pictures of the stance in the attachments.
