Can someone tell me, what is the normal operating temperature with a obd scan that you get on your car?
Since mine does not have a temperature gauge i'de check on torque and the coolant temperature is very inconstant, in normal riding its betwen 94 and 97° but and i'm driving in montains it can get up to 104°
Im worried if its normal because mecanic says its normal, but in others marks the temperature its much more stable

All VW coolant temperature sensor and IC coolant temperature gauges have linear correlation from the bottom of the scale up to the point before reaching normal temperature (90°C). Basically IC gauge will show precise temperature from the lowest values up to approximately 85°C.
From 85°C up to approximately 95°C of real sensor temperature the IC gauge will be showing 90°C constantly. And then once the temperature goes beyond 95°C the sensor and the gauge go back to linear correlation again.
This can be recalibrated in the IC eeprom. See below example with raw values. Red line shows factory correlation and green modified to be linear accross the whole range.
In your case you can't see your IC coolant temperature and OBD dongle (Torque app) shows you real temperature. So I would say all is good but if your coolant temperature exceeds 100°C then it is probably good idea to change your thermostat. Very easy task and also inexpensive. Tgabk you for the the help, i have a friend who as a golf 1.6 tdi and he says that sometimes he reach the 102° so i'm looking for other opiniões, i'm considering change da thermostat
