Honestly though, this car is a far better car on grippier rubber. It performs better and your confidence in its abilities is hugely improved too. If the Michelins lasted half as long I'd still change. Leaving these on the car is like making Usain Bolt run in a pair of Dutch wooden clogs.
I will try and save up for the PS4. 225/40r18 looks nice and beefy.

The steering feedback based on the tyre construction materials.
Grip levels.

It should be more comfortable (you gain 4mm of rubber to filtrate the imperfections of the road), grippier and cheaper. Maybe it will consume a little more, but it won't be so much.

Had a pressure warning the other day, luckily it must've been a minor threshold reading drop due to the cold weather (it was 3C Tuesday morning). 3 days later (Friday morning), I had to go to work for the first time in 2 weeks. I remembered to drop the pressures after increasing them did nothing for mpg and made the ride worse. 36psi fronts and 33psi backs definitely seems to be the sweet spot for 225/40/R18.
If you change your tyres immediately after delivery, you can get most of your money back if you get a good deal on the Michelins. When the wife's new GTI+ was dropped off at my place of work, I drove it straight to Costco to get shod in PS4s. £320 all in, and I got £210 back for the Bridgestones that were so new that they still had the green pigment line on the tread surface. They're expensive tyres - a Mercedes B-class owner got tyres for £210 that would've cost them £550, and I got most of my money back. Once they're considered properly used, you'll get a lot less for them. I got £140 for my set when I changed 4500 miles in on my 2018 GTI+ . The car is massively better with some decent tyres on. You really are driving a hugely compromised car with the Bridgestones on.

My Bridgestones were swapped out after around 1000 miles and they're still sitting in my dad's garage. For some reason I thought it would be a good idea to keep them as a backup. Wondering if I could get between £150-200 for the set of four if I was to sell them (after things hopefully settle with COVID-19).

Are you sure? What size are they? 215/40 R18 or 225/40 R18 on 18" Brescia wheels? I'd expect 215's if they came as original equipment.
Sure you haven't got Michelin Primacy 215/45 R17 on 17" Parker wheels?

I thought I would have gotten Primacy 3's or Bridgestone like everyone else but no they are PS4's and I have 17's on my car. I do have a really good relationship with my dealer and I also got a 4k discount and an additional 2 free services ontop of the already free services.

What did you do, hypnotise your dealer to get all that? Before the deposit contribution, best discount on GTI+ was around £2800, and it has reduced a little as the deposit contribution became available.
Doubt the dealer would've swapped Michelin Primacy 3 for PS4, prompted or unprompted. If you've got PS4 you've been lucky enough that VW ran out of Primacies when your car was built and the backup tyre (presumably) was PS4.

I've had a few VW and all my work has always been done at my local VW, I also work for a company that does a lot of concept work for VW itself so my relationship with the dealer is quite good and at first I wasn't going to buy the car I was actually planning on getting a used R but ended up walking out with a Polo GTI and in addition there was some issues on delivery with timing and trying to get the car to me on the Monday Boris announced a lockdown so I was at the dealer for a few hours so maybe they did it to be polite and keep my service.

What size wheel are you talking about? Haven't seen any mixture of brands for the 2 different wheel sizes. The general rule has been for UK Polo GTI:
17" Parker wheels get 215/45 R17 Michelin Primacy.
18" Brescia wheels get 215/40 R18 Bridgestone.Turanza
