Ah, now I feel reassured
I didn't want to dissassemble the car again (all the trim panel) as they tend to break with time and they are stupid expensive (80 euros for the C pillar for exemple).
So for the trim, did you fully removed it or just put it aside (in order to fully removed it, you need to remove the side rear wheel trim next to the rear seat).

yes, disassemble trim pieces. You dont need to fully remove it. unbolt it+ Unclip so it can tilt and give you access.
And yes use electricians wire and tape it to the harness, but again guide the harness with your hand near the window defrosters. there are internal metal pieces and the connectors ends get stuck, really stuck.
Dont pull to quickly on the harness to get it out.
Also window defroster be careful when disconnecting the left side from the harness.
what you need to think about.
1.) removing third brake light it can easily break/ delaminate. also seal around it you cant buy separately.
2.) Disconnecting the left side defroster from harness - dont break the tab from the window they are soldered to the windows an can become brittle.
3.) Guide the cable connectors so they dont get stuck on the internal ridges ( it can happen)
4.) The plastic clip that holds the grommet to the car body - i used tweezers to remove it and patience
The trim peaces dont break easily.
Its not that hard as it seems, just dont rush it.

For the window defroster, I have to investigate more as I don't know how they manage the cabe harness for the tabs.

According to ELSA, they just said "disconnect".

I will pain in the ass to handle the connector (yellow part on the schematic) to stay in place.

So here is a focus of my power supply line for the rear defrost window:

So according to the manual, I just have to pull.
But how to remove the connector from the black support behind ?
Here is the black part (6Q0971701A):

So it's seems, this cable is engaged (holded ?) by the black part ?

So the back part also need to came out ? For me yes, otherwise it will be hell to remove/install the new cable.

What if you first thread some fabric cords through the hole in the tailgate frame and tie them to those terminals before inserting the entire wiring harness? Then you'll just have to pull on those cords.

Its easy to remove the black plastic part from the trunk.
Use a flat head and insert in the slot.
Then you need to unconnect the harness from the black plastic part and from the defroster line tab
But the connector can grip the strip pretty hard on the flat defroster wire. use a screwdriver to assist it
Its easy to remove the harness part from the black connector.
When you pull the harness,
that cable that branches for the defroster will easily align near the hole.
