Getting really fed up with it lately, It feels so gutless when i'm trying to pull away at junctions! There's some evil throttle delay, so everytime i put my foot down there's a second or two delay before the power kicks in and then it wheelspins everywhere

Don't worry about it.. I've lost count of the amount of times I just wanted to scrap my polo and get something that actually works, and I've only had the scirocco for a few weeks and I'm already feeling like that.. but believe me, the moment you get it fixed you'll love driving it again.
Btw, mine used to do just that. Turned out to be drastically overfuelling and flooding the engine every time I put my foot down. Bit of carb adjustment sorted it (get a mechanic to do it properly, carbs are a bastid if you don't know exactly what you're doing and have all the right kit, it saves a lot of hassle to get it done properly straight off
). You'll be able to tell if that's your problem if your spark plugs are covered in black soot, and probably smelling a bit of petrol.

I got to the point with mine where i thought sod it, brought a 1.1 P Reg Fiesta with 65K on the clock drove it for a week.. and gave it to my brother for when he is 17..

i honestly havn't got bored of my car yet...has it's probs, only time i want a different car is when i'm struggling up a hill with my right foot planted.
i'm probably gonna get my carb checked at a garage just to make sure because mines feeling a bit wierd at the moment (e.g prob in my other post about the juddering)

Oh i don't hate it, as i said there's a thin line between love and hate, and as you said.. (exactly the same in my case) i get very fustrated when going up a hill with my foot planted and the car not going anywhere, or the car randomly stuttering after its been out in the cold.. but i dont have any of those problems now 
Also on your foot planted problem, i would recommend checking for the condition of the airfilter pipelines at the very back (quite hidden)..
there are two important one's.. there is a huge black rubber pipeline going from the airfilter to the lower engine, these tend to crack because of the heat, subsequently you loose an incredible amount of compression to the engine, also it means that alot of the air, isn't filtered, as it's drawing air in through the cracks - dust and all the other crap around your engine..
There are two ways to solve this, either get some water proof gaffers tape and tape the whole pipe up - this works perfectly, or replace the pipe - about £8 for the pipe but its alot of effort getting under the car and replacing it due to the tight squeeze..
The other pipe is a tiny tiny itsy bitzy teeny weeny pipe that comes out of the back of the airfilter and is supposed to attach over a small 6mmx6mm rounded outlet tube that comes out of the carberretor, this becomes VERY easily detached, especially if you've moved your airfilter, taken it off, or replaced any of the parts around it.. if this isn't on.. the compression loss in acceleration and the need for choke is ridiculous.. (or so i found)..
