thing is its my mums car and i can't afford my own and she'll let me do things to it coz she used to when she was younger but chris says theres no point coz its an E

You can always do stuff to your car, which you'll be able to use when you get money to buy your own car. Examples of that are upgrading the audio, and getting some nice floor mats along with pedals. Don't forget you don't need to buy expensive things to make a car look nice, a badgeless grill doesn't cost more than 20 quid.
Every car has potential. For example, take a look at my car; standard it's just another underpowered shopping trolley. With a set of decent wheels, a lowering kit, and some body parts it's good enough to represent the forum at some of the biggest VW shows.
With an "E" model, engine modifications aren't priority really. Just enjoy doing things the "low and slow" way. I don't agree that there's no point in modifying an E model, to be honest. If I didn't do anything to my car, I would be driving another generic shopping trolley.
For your car; I'd recommend stuff like colour-coding the front lower valance and the grille. Also; have a look at Alex Perkins' 1.0E, it's the pinnacle example of a nicely modified E model

And the end of this week sees the fitting of my newly refurbished BBS RX IIs mmm. The last mod this car will ever see on the outside is going to be a 60/60 drop
Then the next project begins - saving for a real GTI from October. Cant wait
