I've managed to do it by pulling passenger seat all the way forward and kind of 'wedging' my camera under the headrest.
Sounds dodge but just lift the headrest and lower it down carefully on the camera giving a secure and harmless grip.
Takes a bit of fiddling to aim and zoom it just right and will only work if you're filming while driving in a straight line (steering wheel is an annoying block)
