Temperature Gauge? Normal then drops off?!

Hi all,

My temperature guage gets up to mid mark as normal then once driving around it will just fall back down to zero for no reason. I had the temp sensor changed but it seemed to be the same. Could the instrument panel be faulty? even though its just the temp gauge playing up? or should I try something else?

car is a 1.4 TDI
