215 35 18 Would be a pretty good compromise.
225 40 18 is much too big for a Polo, that 's a Golf size. In fact if they are decent brand tyres you'd probably get a good price for them on ebay or the forums.

Sorry can't help with a demonstrator but as I own both a MK6 GTI and a 6r GTI I can tell you that the Polo is more fun and does feel more lively than the Golf.
