what is offset and how does it affect the alloys on your car?
i have never understood this?

Standard offset on mk5s is ET38. It's a measure of how much a wheel will stick out, in laymans terms anyway.
So if you get ET28 wheels they will stick out 10mm further than ET38 wheels (of the same width)

depends what size wheels you have too. you can have anything from 20 standard 38 on 14's and 25 upto standard on 15's if not too low.
I have et30 on 14's and it fills out the arches lovely, you dont want them sticking out past the widest part of the arches very much unless your gonna change them MOT time.

iam considering getting 15's or 16's and i want the arched to be filled but i don't want to have to modify the arches. what would you suggest?

with 16's if you want to go really low its best to get an offest of between 35-38, so that the tyres sit nicely under the arch
if your not lowering past -50mm then i'd go for a lower offset to fill those arches.

It all depends on how much your willing to muck around with your arches.
ET 15 for my 9Js sticks out a s**t load and with it sitting on the floor the arches need pulling/flaring and rolling
Offsets can often help certain size wheels clear big brakes too

The BBS RXII (standard GTi wheels) have an offset of 42.

i have 15s, front is 7J ET37 and rear is 8J ET25
rears stick out a bit, have 195s stretched on them though so they still pass the MOT
