But i think a set up like 256 zimmerman grooved and drilled discs, a decent set of pads, and upgraded braided hoses would do the job perfectly well

In terms of rear braking, they do so little anyway there isn't much point in upgrading them. Personally I just fitted new standard pads as the originals were worn down.
As for the difference doing it makes, it's all relative I guess. I only fitted standard OEM discs and pads so in terms of actual stopping power there's no real gain. Aftermarket discs and pads should make a bigger difference.
However the real advantage from the 280mm conversion is resistance to brake fade. Across my favourite moors road whereas the 256mm were useless by the end, the 280s are still rock solid.
